Aiskrim..

        Lagi satu perkara yang menarik tentang makanan orang-orang Turki ini ialah Aiskrim tradisinya..Salah satu bahan utama untuk membuat aiskrim ini ialah salep..Nak tau apa salep tu sila rujuk entri sebelum ini. Dalam bahasa Turki, aiskrim ini dipanggil Dondurma, bermaksud sejuk..Bahan campurannya adalah susu, gula, salep dan mastic (mastic ialah sejenis resin sejenis pokok yang boleh dimakan) Ia dipercayai berasal dari daerah Kahramanmaras dan disebabkan itu ia juga dikenali sebagai Aiskrim Maras..(Maras Dondurma)



        Dua perkara yang membezakan aiskrim ini ialah tekstur dan tahan cair..ini adalah kerana ia mempunyai campuran salep dan mastic. Mastic juga memberikan kekenyalan kepada tekstur aiskrim ini.

         Dondurma biasanya dijual oleh penjaja dan di kedai. Ia perlu dikacau selalu dengan menggunakan sudip panjang untuk memudahkan ia dihidangkan nanti..

Dondurma juga popular di negara Greece terutamanya di kawasan utara. 
Ia dipanggil 'Dudurmas' atau 'Kaimaki'.

         

        Dondurma (Turkish literally "freezing") is the name given to ice cream in Turkey Dondurma typically includes the ingredients milk, sugar,salep and mastic. It is believed to originate from the Turkish region of Kahramanmaras and hence also known as Maras Ice Cream












         
   Two qualities distinguish Turkish ice cream: texture and resistance to melting. Inclusion of the thickening agents salep, a flour made from the root of the Early Purple Orchid, and mastic, a resin, impart chewiness.
The kahramanmaras region is known for maraş dondurması, a variety which contains distinctly more salep than usual; tough and sticky, it is sometimes eaten with a knife and fork.

         Dondurma is commonly sold from both street vendor's carts and store fronts where the mixture is churned regularly with long-handled paddles to keep it workable. Vendors often tease the customer by serving the ice cream cone on a stick, and then taking away the dondurma with the stick and rotating it around, before finally giving it to the customer.



 Dondurma is also consumed in Greece especially in the north of the country, 
where its is called "Dudurmas" or "Kaimaki".
